Pistachios have surged in popularity, becoming a go-to snack for many. According to global growth insights. The market has seen remarkable growth, with global production surpassing 747,000 metric tons. The U.S. leads the industry, accounting for over 50% of total production, while Turkey follows closely, contributing around 30%. Demand for pistachios continues to rise, particularly as a nutritious snack, with a 40% surge in their use in confectionery items like chocolates, pastries, and spreads. But where did it start? It appears to have taken off last year when the top trending dish on Deliveroo was Can’t Get Knafeh of It from Fix Dessert Chocolatier in Dubai, UAE. This chocolate confectionery was invented by British-Egyptian entrepreneur Sarah Hamouda. Inspired by the traditional Middle Eastern knafeh, this dessert showcases pistachios' rich flavour and vibrant colour, further cementing their status as a sought-after ingredient in modern cuisine.


The Rise of Bold Flavours


In a recent flavour survey by Innova, 22% of consumers globally reported looking for “intense and bold flavours” and pistachios fit perfectly into this trend. Their naturally sweet, nutty flavour and satisfying crunch make them a standout ingredient. The growing interest in Middle Eastern and Mediterranean cuisine has further propelled pistachios into the spotlight, influencing everything from gourmet snacks to artisanal desserts.


A Nutritional Powerhouse


Numerous research papers highlight how pistachios are packed with protein, beneficial fats, and antioxidants, making them an excellent choice for health-conscious eaters. Rich in heart-healthy monounsaturated and polyunsaturated fats, they help support cardiovascular health and improve cholesterol levels. Their fibre content also aids digestion and keeps hunger at bay, reinforcing their reputation as a smart snack.


Social Media’s Love for Pistachios


Pistachios are an on-trend ingredient with global social conversations around the nuts increasing by 10% over the past year reported in the consumption analysis and statistics 2025 report by tastewise  .Pistachios' striking green and purple tones make them highly photogenic—an important factor in today’s visually driven digital landscape. The popularity of pistachio-flavoured foods, from creamy desserts to lattes, has been amplified by influencers and food bloggers eager to share creative recipes and eye-catching content. Some of the biggest social media trends include:


  • Pistachio Cream Pastries: Decadent baked goods filled with rich pistachio-flavoured cream, gaining traction on TikTok.

  • Pistachio Latte Trends: Coffee enthusiasts embracing the nutty, subtly sweet notes of pistachio-infused drinks.

  • DIY Pistachio Spreads: Homemade pistachio butters and pastes going viral for their versatility and health benefits.

  • Pistachio Aesthetic Boom: The nut’s distinctive colour inspiring trends beyond food, including makeup and fashion.


Pistachios in Pastries and Beyond


The pistachio flavour has found its way into a variety of baked goods, with brands and bakeries experimenting with new ways to incorporate it into their offerings. Leading French bakery, Bridor, recently introduced a pistachio-filled croissant, reflecting the growing demand for unique and indulgent pastries. A Bridor survey of 6000 consumers shows 78% of Europeans want to try filled Viennese pastries, whilst a further study showed 40% of British consumers are looking for croissants with original flavours making pistachios an exciting ingredient for innovation in the baking industry. Erwan Inizan, Northern Europe Sales Director at Bridor, said: .  

“Pistachio-based products have taken the food industry by storm in the past 12 months, with consumers enticed by the bold green visuals and wholesome nutty taste. We’ve used our Viennese pastry expertise to craft this new pistachio-filled croissant, so that hospitality operators can expand their Viennese pastry offering and meet the demand for alternative croissant flavours. 

A More Sustainable Choice


Beyond flavour and nutrition, pistachios also appeal to eco-conscious consumers. They require less water compared to other nuts, making them a more sustainable option. Many producers focus on ethical sourcing and responsible farming practices, adding to their appeal for mindful shoppers. Furthermore, being rich in bioactive compounds like polyphenols, flavonoids, and antioxidants, pistachio shells offer powerful anti-inflammatory, antibacterial, and antioxidant benefits. These properties make them valuable for applications in pharmaceuticals, cosmetics and personal care products.(Ripari Garrido et al., 2024)
