The global sourdough market, valued at USD 3.45 billion in 2025, is projected to reach USD 6.67 billion by 2035, according to a new report from Market Research Future. The forecast represents a compound annual growth rate of 6.8% over the decade, driven by expanding demand across artisan, industrial, foodservice and retail channels.
What the figures point to is a structural shift rather than a trend cycle. Commercial bakeries are integrating sourdough starters, fermented dough systems, dried cultures, liquid preparations and concentrates not simply for flavour, but for dough performance, texture and product differentiation.
Consumer interest in naturally fermented foods, recognisable ingredients and premium bakery formats is sustaining demand across categories.
From starter management to turnkey systems
One of the clearest dynamics in the market is the movement toward ready-to-use fermentation formats. Liquid starters, in particular, are being positioned as a route to industrial scalability: simpler dosing, consistent acidity and reduced starter-management burden compared with traditional methods.
Whilst, dried cultures offer complementary advantages in shelf stability and transport logistics, relevant for manufacturers operating across multiple sites or requiring standardised ingredient handling.
The report identifies controlled fermentation as increasingly central to commercial production, enabling greater consistency in aroma, dough development and production timing. Industrial fermentation systems, meanwhile, are narrowing the gap between artisan-style process characteristics and high-volume output.
Who holds market position
The competitive landscape is described as fragmented, spanning global fermentation specialists, bakery ingredient companies, premix suppliers and regional sourdough producers. Puratos Group is cited for its Sapore liquid and dried starter range and its strain library. Lesaffre's position rests on fermentation science and the Livendo starter range. Lallemand Inc. operates primarily through dried cultures under the Florapan label. IREKS GmbH and Ernst Böcker GmbH & Co. KG are noted for rye and traditional starter expertise.
Other companies listed include Bakels Worldwide, AB Mauri, Fazer Group, Philibert Savours, Pfahnl Backmittel GmbH and Vandemoortele. Competition in the segment is described as operating across culture performance, application support, formulation flexibility and geographic reach rather than scale alone.
Grain diversification as a growth lever
Beyond format, ingredient source is emerging as a growth variable. Rye remains significant within European baking for its contribution to flavour, acidity and crumb structure. The report flags the "others and ancient grains" segment (encompassing spelt and heritage varieties) as one of the faster-growing categories, reflecting both consumer interest in grain diversity and manufacturer appetite for premium differentiation.
Wheat retains its position as the dominant foundation across bread, rolls, pizza and general bakery applications.
Pizza crust and snacks expanding the use case
By application, bread and rolls account for the core volume, but pizza crust is identified as among the fastest-growing segments. Extended fermentation, distinctive flavour and textural qualities are driving uptake in that format. Sourdough characteristics are also being adopted in crackers, snacks and pastries, where manufacturers are seeking new sensory profiles or premium positioning without reformulating from scratch.
Regional picture
Europe remains the largest regional market, underpinned by its rye-baking traditions, artisan bakery infrastructure and the concentration of major fermentation technology suppliers. North America is described as a significant secondary market. Asia-Pacific is positioned as the principal growth opportunity over the longer term, on the basis of urbanisation, foodservice expansion and growing exposure to fermented bakery formats. Latin America and the Middle East and Africa are characterised as emerging markets as modern bakery formats and premium ingredients expand.
