French frozen bakery manufacturer Bridor has released a 120g Maxi Croissant designed specifically for the food-to-go sandwich market, responding to data showing 71% of Europeans want savoury croissant-based sandwiches.


The ready-to-bake format targets coffee shops, cafés and restaurants looking to capitalise on demand for what the industry terms 'crodwiches'. Industry figures show savoury pastries now rank as the second fastest-growing food-to-go category by volume sales.


Current consumption patterns indicate 31% of consumers already eat croissants as part of savoury meals, whilst 41% want more savoury croissant options on menus. The statistics suggest the format has moved beyond novelty status.


Erwan Inizan, Northern Europe Sales Director at Bridor, said the 120g size suits operators seeking alternatives to standard bread formats. He went on to say

"The croissant's soft centre, flaky texture and larger format make it a great sweet base for a sandwich and therefore a unique alternative to traditional bread formats,"

The company positions the product as a daypart extension tool, allowing venues to offer distinct menu items across breakfast, lunch and afternoon service periods.


Product Specifications


The Maxi Croissants require 30-45 minutes defrosting at room temperature before baking at 165-170°C for 15-17 minutes. They're supplied in boxes of 36 units.


Bridor has published recipe suggestions including a lemon chicken crodwich combining grilled chicken strips, fried courgette, feta, black olives and lemon yoghurt sauce. The company's Croissant Revolution guide provides additional serving concepts.
